Instructions

Start by washing, rinsing, and draining the rice well to remove excess starch. Heat olive oil or butter in a medium saucepan or pot over medium heat. If you like a garlicky kick, add minced fresh garlic and cook for about 30 seconds until fragrant. Stir in the rice and cook for 1 minute, stirring frequently to toast it lightly.

Pour in the hot water (or chicken broth for extra flavor) and add salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed. Remove the saucepan from heat and let the rice sit, covered, for 5 minutes to steam and fluff up.

Add the chopped fresh cilantro, fresh lime juice, and cumin (if using) to the cooked rice. Gently toss to combine, fluffing with a fork to keep the grains separate. Adjust the seasoning with more salt or lime juice, if desired.

Serve warm as a side dish or a base for a chicken burrito bowl, ground beef taco bowl, or other meals.   • What Kind of Rice? For this recipe, I used basmati rice. But you can use jasmine, sushi rice, brown rice, any other long grain rice or short grain rice whatever youโ€™re feeling!

  • Fridge Storage: Store any leftover rice in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop with a splash of water or broth to restore moisture.
  • Freezer Storage: Cilantro Lime Rice freezes well for up to 2-3 months. Allow it to cool completely before dividing it into individual portions and storing it in airtight containers or freezer bags, removing as much air as possible. To reheat, place the frozen rice in a microwave-safe dish with a tablespoon of water or broth, cover, and heat until warmed through, or reheat on the stovetop in a covered pan with a splash of water or broth to restore moisture.

Ingredients
  

  • 2 tsp olive oil or butter
  • 1 garlic clove minced (optional, for added flavor)
  • 1 cup long-grain white rice basmati, or jasmine rice
  • 2 cups hot water or chicken/vegetable broth for more flavor
  • ยฝ tsp salt or to taste
  • ยฝ cup chopped cilantro leaves
  • 1 tbsp fresh lime juice about 1/2 lime
  • ยผ tsp cumin optional, for depth of flavor

  • Add the cilantro, lime juice, and cumin if using to the bowl, and gently toss to combine., and fluffy with a fork. Taste and adjust seasoning with more salt or lime juice, if needed.
  • Serve warm as a side dish or as a base for burrito bowls or other meals.
