Instructions
Start by washing, rinsing, and draining the rice well to remove excess starch. Heat olive oil or butter in a medium saucepan or pot over medium heat. If you like a garlicky kick, add minced fresh garlic and cook for about 30 seconds until fragrant. Stir in the rice and cook for 1 minute, stirring frequently to toast it lightly.
Pour in the hot water (or chicken broth for extra flavor) and add salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed. Remove the saucepan from heat and let the rice sit, covered, for 5 minutes to steam and fluff up.

Add the chopped fresh cilantro, fresh lime juice, and cumin (if using) to the cooked rice. Gently toss to combine, fluffing with a fork to keep the grains separate. Adjust the seasoning with more salt or lime juice, if desired.

Cilantro Lime Rice
Ingredients
- 2 tsp olive oil or butter
- 1 garlic clove minced (optional, for added flavor)
- 1 cup long-grain white rice basmati, or jasmine rice
- 2 cups hot water or chicken/vegetable broth for more flavor
- ยฝ tsp salt or to taste
- ยฝ cup chopped cilantro leaves
- 1 tbsp fresh lime juice about 1/2 lime
- ยผ tsp cumin optional, for depth of flavor
