Taco Seasoning (or you can use store-bought)
  • 1ยฝ teaspoons chili powder
  • ยผ teaspoon garlic powder
  • ยผ teaspoon onion powder
  • ยฝ teaspoon paprika
  • 1 teaspoon ground cumin
  • ยผ teaspoon salt
  • ยผ teaspoon black pepper
  • optional: a pinch of cayenne pepper for heat adjust to taste
Chicken
  • 1 lb boneless, skinless chicken breasts or chicken thighs 450g
  • 1 tbsp olive oil
  • 2 cloves of garlic minced
  • ยฝ to 1 tbsp taco seasoning
  • 1 tsp salt
  • ยฝ tsp black pepper
  • juice of 1 lime
Beans
  • 1 can black beans 15 oz
  • 1 tsp olive oil
  • 1 garlic clove minced
  • ยฝ tsp salt or more to taste
  • ยผ tsp chili powder
  • optional: garlic powder, onion powder, black pepper
Salsa
  • ยผ cup red onion
  • 1 cup chopped tomato or cherry tomatoes
  • 2 tbsp chopped cilantro
  • ยฝ tsp salt
  • 1 tbsp lime juiced
  • optional for flavor: oregano, black pepper
Cilantro Lime Sauce
  • ยฝ cup sour cream or yogurt
  • 1 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1 garlic clove minced
  • 3 tbsp cilantro chopped
  • ยฝ tsp salt
  • 1 tbsp water to thin it out
Toppings
  • 1 cup cooked corn kernels
  • 1 avocado diced
  • cooked rice recipe here
  • jalapeรฑo slices optional
  • fresh cilantro leaves for garnish
  • lime wedges

Instructions
 

Taco Seasoning
  • Mix all the spices together in a small bowl. Set aside.
Chicken
  • Slice the chicken into strips.
  • Heat a skillet over medium-high heat and add the olive oil.
  • Add the garlic and cook until fragrant.
  • Add the chicken, salt, and pepper. Cook the chicken for 4-5 minutes on each side or until fully cooked and golden brown.
  • Add the lime juice and stir.
  • Add ยฝ-1 tbsp taco seasoning in and stir to coat. Cook for another minute.
  • Remove the chicken from the heat.
Beans
  • Drain and rinse the beans.
  • Add 1 tsp of olive oil to a small saucepan. Add 1 minced clove of garlic and cook until fragrant over medium heat.
  • Add the beans, salt, and chili powder. Stir with the garlic and olive oil and cook just until heated through, around 2 minutes. Add additional seasonings such as garlic powder, onion powder, black pepper.
Salsa
  • Mix all the ingredients together in a bowl. Set aside.
  • Cilantro Lime Sauce
  • Place all ingredients in a small food processor and process until mixed. You can also whisk them in a bowl if you donโ€™t want to use the blender.
Cilantro Lime Sauce
  • In a blender add all of the ingredients for the sauce. Blend until smooth.
Assembling the Burrito Bowls
  • In each bowl, add a base layer of cilantro-lime rice.
  • Top with chicken, black beans, corn, salsa, avocado.
  • Top with the cilantro lime sauce.
  • Garnish with fresh cilantro leaves and a squeeze of lime juice.
  • Serve immediately and enjoy your fresh, flavorful chicken burrito bowl!

Notes

Beans: You can use plain beans from the can without cooking with oil and garlic to make things easier.
Salsa: You can simply use store-bought salsa, or just chopped tomatoes.
