Funfetti Cookies

The Best Funfetti Cookie Recipe
These cookies are one of my favorite new recipes! A classic sugar cookie base is made extra fun with a generous handful of rainbow sprinkles (jimmies). The addition of an extra egg yolk makes them super chewy, while a touch of baking soda and baking powder keeps the centers soft and the edges lightly crisped. Chilling the funfetti cookie dough before baking helps control spreadingโbut if youโre in a hurry, you can bake them right away too!

Making the Dough
In a medium bowl, cream the softened butter for 1 minute with a hand or stand mixer on medium-high speed. Add the sugar and beat for another 2 minutes until fluffy and pale. Mix in the egg, then scrape down the bowl and add the egg yolk and vanilla, mixing just until incorporated.

Add the dry ingredients: flour, baking powder, baking soda, and salt. Mix on low until the dough comes together. Fold in the rainbow sprinkles until evenly distributed.

Scooping & Chilling
Use a cookie scoop to portion the dough into small balls and place them on a parchment-lined baking sheet. Freeze the dough balls while you preheat the oven to 350ยบF.

๐ Chilling isnโt required but helps reduce spreading for thicker, fluffier cookies.
Baking the Cookies
Once the oven is preheated, transfer the cookie dough balls to a parchment-lined baking tray, spacing them 2 inches apart.
Bake for 10 to 12 minutes, until the cookies are set on the edges and just beginning to turn golden. The centers will look softโtheyโll firm up as they cool.
Cool the cookies on the tray for 5 minutes, then transfer to a cooling rack to cool completely.

Serving & Storage
Room Temperature: Store in an airtight container for 3 to 4 days.
Freezing Dough: After freezing solid, store dough balls in a ziplock bag for up to 2 months. Bake from frozenโjust add an extra 1 to 2 minutes to the bake time.
Freezing Baked Cookies: These cookies also freeze well once baked and hold up well in the fridge.

Recipe Tips & Tricks
โ Chilling Tip: Chilling before baking gives the cookies a thicker, softer texture with less spread.
โ Bake Straight Away: You can bake the dough right after mixing if youโre short on timeโjust expect slightly flatter cookies.
โ Add-Ins: Feel free to mix in chocolate chips, chopped candy, nuts, or coconut flakes along with the sprinkles. Start with about ยผ cup.
โ Sprinkle Tip: Use rainbow jimmies (the long kind), not nonpareils, which tend to bleed color into the dough.
Variations on Funfetti Cookies
White Chocolate Funfetti Cookies: Add 1/2 cup of white chocolate chips to the dough along with the sprinkles for an extra creamy, sweet touch.
Birthday Cake Funfetti Cookies: Replace 1/4 cup of flour with funfetti cake mix (like vanilla or yellow) for a more intense birthday cake flavor.
Chocolate Funfetti Cookies: Swap 1/4 cup of flour for unsweetened cocoa powder to make chocolate Funfetti cookies. Use chocolate sprinkles for a double chocolate twist!
Gluten-Free Funfetti Cookies: Use a 1:1 gluten-free flour blend instead of all-purpose flour. Make sure your sprinkles are also gluten-free.
Lemon Funfetti Cookies: Add 1 tbsp of lemon zest to the dough for a fresh, citrusy kick. Pair with yellow and white sprinkles for a bright, zesty look.

Funfetti Cookies
Ingredients
- 10 tbsp unsalted butter, room temperature 141g
- 1ยผ cup granulated sugar 225g
- 1 large egg, room temperature
- 1 large yolk, room temperature
- 2 tsp vanilla extract
- 2 ยผ cup all-purpose flour 283g
- 1 tsp baking powder
- ยฝ tsp baking soda
- ยฝ tsp salt
- ยฝ cup jimmies/rainbow sprinkles
Instructions
- In a bowl, beat the butter with a mixer for 1 minute at medium-high speed.
- Add the sugar and beat for another 2 minutes, until creamy and fluffy.
- Add the whole egg and mix to combine. Scrape the bowl and mix briefly.
- Add the egg yolk and the vanilla, and mix until incorporated.
- Add the flour, baking powder, baking soda, and salt to the bowl.
- Mix on low until the ingredients come together.
- Add the sprinkles and fold to combine.
- Scoop the cookies into small balls using a cookie scoop, and place each cookie in a tray lined with parchment paper.
- Place the cookies in the freezer while you pre-heat the oven to 350ยบF.
- You donโt necessarily have to chill the cookies before baking, but if you donโt chill them they will spread out slightly more than if you do.
- Once the oven is pre-heated, place the cookie balls on a tray lined with parchment paper or a silicone mat, at least 2 inches apart from each other.
- Bake the cookies in the oven for 10 to 12 minutes, until they are set on the outside and slightly golden. Let cool on the tray for five minutes then transfer to a wire rack to cool completely.
- Store the cookies at room temperature in an airtight container for up to 3 to 4 days.
These were so delicious! They taste “store bought” in the best way possible, highly reminiscent of my childhood!
These turned out great but I would add less sugar. They are sweeter than store bought. A little less sugar and perfect!
